Candy recipe's



Dainty Divinity

2 egg whites
1 package(3 ounces) orange gelatin
3 cups sugar
3/4 cup hot water
3/4 cup light corn syrup

Line a 9 inch square baking pan with aluminum foil, extending foil over 2 sides of pan; grease foil. In a large bowl, use a heavy duty mixer to beat egg whites until stiff. Gradually beat in dry gelatin until well blended; set aside. Butter sides of a heavy medium sauce pan. Combine sugar, hot water, and corn syrup in saucepan. Stirring constantly, cook over medium-low heat until sugar dissolves. Using a pastry brush dipped in hot water, wash down any sugar crystals on sides of pan, making sure thermometer does not touch bottom of pan. Increase heat to medium and bring to a boil. Cook, without stirring, until mixture reaches 254 degrees. Test about 1/2 tsp of mixture in ice water. Mixture will roll into a hard ball in ice water and will remain hard when removed from water. While beating at high speed, slowly pour hot mixture over egg whites; beat until candy thickens and begins to hold its shape(about 4 minutes). Spread into prepared pan; cool completely. Cut into squares and enjoy

Potato Candy
___________________________________________________________________

1 medium/large potato (boiled and mashed)
1 teaspoon vanilla
2-3 pounds powdered sugar
peanut butter (creamy)

Mix together potato and vanilla. Mix in powdered sugar until you
have a dough like consistency so that you can roll it out flat.
Roll to 1/4 inch thick. Spread with peanut butter. Roll like a
jelly roll and refrigerate until chilled. Cut into pinwheels for
serving.

Variations: Instead of peanut butter, you can put chocolate in
the middle or cut out small circles with a cookie cutter and put
a nut in the center then dip in chocolate.
Substitute another flavoring instead of vanilla (ex. use lemon
and add a few drops of yellow food coloring or cherry flavoring
and red food coloring).

Christmas Party Mints

1 (14 oz) can Sweetened Condensed Milk (not Evaporated milk)
1 (32 oz) package confectioners' sugar
1/2 teaspoon peppermint extract
Assorted colored granulated sugar or crystals or chocolate

1. In medium bowl, beat Milk and half of the confectioners' sugar until blended, Gradually add remaining

confectioners' sugar and peppermint extract, beating until stiff.

2. Roll mixture into 1/2-inch balls; roll in desired sugar and place on parchment paper. Let stand 8 hours to set.

Store covered at room temperature.

Makes 3 dozen mints

Tip:
For the smoothest texture, be sure to sift the confectioners' sugar before mixing. It will remove any lumps and make

the mints extra creamy.

Variation:
You may also dip uncoated mints in melted bittersweet chocolate for a different flavor.

STAY OUT OF THE COOKBOOKS!!! We have lapbands you know.  I had to quite looking at the recipes, cause I was drooling all over.. I am going to have to go to the diet page now!!

I got the bullet from my parents..you'd be amazed at what you can still eat with one of those..pasta is back in my diet..although your still limited to how much you eat at least I can eat it. :)
