Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Lean Ground Beef 1 large Onion -- chopped 2 cups Whole Kernel Corn, frozen 1 package Tater Tots, frozen -- about 6 cups 1 can Cream of Mushroom Soup 1 can Evaporated Milk to taste Salt and Pepper 1 teaspoon Parsley -- dried or fresh 1 1/2 cups Mozzarella Cheese -- shredded
In a large electric skillet, brown ground beef and onion, seasoning to taste with salt and pepper. When mixture is browned, spread evenly over bottom of skillet. Layer corn on top of meat mixture, and then layer tater tots on top of corn. In a large bowl, mix soup, milk, parsley and salt & pepper to taste, until mixture is smooth. Pour mixture over layered ingredients in electric skillet, then set temperature to simmer and bake in covered skillet for 1 hour. Remove lid from skillet, and sprinkle with shredded cheese. Turn skillet off, and unplug- then replace lid for 5 minutes to allow cheese to melt. Serve hot as a main dish.
Note: To use this recipe for Once A Month Cooking (OAMC), prepare meat/onion mixture, and place into bottom of deep baking pan, 9x13 inches or larger. Layer corn, tater tots and soup mixture on top as directed above- then sprinkle with cheese and cover tightly with foil. Label and freeze for up to 6 months. To complete cooking later, thaw over night in refrigerator and bake at 350 degrees for 1 hour.
Cook rice if not using leftover. Brown beef and onion. Add tomato sauce, garlic salt, sugar, salt, pepper, oregano, and parsley. Cover and simmer 15 minutes. Combine cottage cheese and rice. Put 1/3 of rice mixture in a buttered 2 quart casserole. Top with 1/3 meat mixture. Continue to alternate layers, ending with meat mixture. Sprinkle with cheese. Bake @ 325` for 30 minutes, or until bubbly.
Saute 1 onion in butter 2 lbs hamburger 16 oz tomato sauce 2 c mozzarella Cheese 2 c. cheddar cheese 2 tubes crescent rolls 16 oz sour cream Basil and oregano
Brown hamburger & onion. Add tomato sauce to hamburger & onion, mix, then spread in a 9 by 13 pan. Sprinkle cheese over the hamburger mixture. Cover well. Unroll crescents & spread with sour cream. Roll up crescents and place in the pan on top of cheese. Sprinkle with basil and oregano to taste. Bake 1 hr at 375-400 deg. f. (You have to keep a eye on it, you might want to try baking it longer at a lower temp. as sometimes it looks like it is done but the crescents are not fully cooked
2 medium potatoes peeled & chunked 1 (1-pound) package smoked sausage, sliced or Polish kielbasa 1 medium onion, chopped 2 to 3 tablespoons vegetable oil 2 cups Velveeta cheese cubed. ˝ cup milk Salt and pepper to taste (2 cups cooked or frozen broccoli florets can also be added)
Boil potatoes until tender. Set aside. In large skillet, sauté onion. Stir in sausage and cook until sausage is heated thoroughly. Add milk and Velveeta stirring as the cheese melts. Stir in potatoes to sausage/cheese mixture, season with salt and pepper. Stir to combine. (Add in broccoli last and stir to combine.)
Another alternative is to use Cream of Mushroom soup in place of milk and Velveeta.
1 1/2 cups hot mashed potatoes (prepared with milk and butter) 1/2 cup sour cream 1 to 2 tablespoons milk 1/8 teaspoon garlic powder 3/4 cup french fried onions 1/2 cup shredded cheddar cheese
In a bowl, combine potatoes, and sour cream, milk, and garlic powder. Mix well. Spoon half into a greased 1 quart baking dish, layer with half the onions and cheese. Repeat layers. Bake uncovered, at 350 degrees for 30 - 35 minutes or until the cheese is melted. Yields 2 servings
8 cups cooked macaroni 12 oz. shredded mozzarella cheese 1 15 oz. jar Ragu Chunky Mushroom Pasta Sauce 1 lb. hamburger

Chicken & Broccoli Casserole
Ingredients:
1 head broccoli cleaned and cut into bite size pieces. 1 can cream of chicken soup 1 small jar mayonnaise (not miracle whip) 1/2 tsp. poultry seasoning 3 boneless, skinless chicken breasts 6 cups stove top stuffing prepared, or your favorite stuffing. 6 slices of American cheese
Clean and cut broccoli into bite size pieces, place in saucepan and cover with water. Cook until just tender, drain and set aside. Mix soup, mayonnaise and poultry seasoning in a separate bowl. Cube chicken into bite size pieces (about 1 inch) and brown them in a skillet until done. In a 9"X13" casserole dish spoon 1/3 of the soup mixture and spread evenly. Then add the cooked broccoli, then 1/3 of the soup, then the cooked chicken, finish with the prepared stuffing and top with the cheese slices. Bake in a 350 degree oven until hot and bubbly.
